Cooking tips
Start with the mango sauce for best results. Let the flavors meld. Prepare the pickled onions next. The sweetness contrasts nicely with the spice. Form beef patties afterward. Use high heat for the grill for a good sear. Don’t overcook the patties. Toasting buns enhances their texture. Assembly is key for presentation and taste.
Chef's notes
- 💡 Use a ripe mango for sauce. Check the sweetness. Adjust sugar if it's tart. Mango adds flavor. Sweetness versus spice. Balance is key.
- 💡 Pickled onions elevate taste. Soak them in vinegar. Brown sugar gives texture. Let them steep for a while. Don’t skip this step.
- 💡 Ground beef should be lean. This makes patties healthier. Fat content can affect cooking time. Monitor grill heat closely.
- 💡 Toast buns really enhances flavor. Golden brown is the goal. They hold ingredients better. Don’t rush this process. It’s crucial.
- 💡 Chili paste adds heat. Adjust according to preference. Level one to ten, you choose. Start light if unsure.
Common questions
How adjust spice level?
Use less chili paste first. Taste as you go. Add more if needed. Spices can overwhelm quickly.
Can I add cheese?
Yes, add cheese near end of grilling. Melt it on patties. Cheddar works well.
What if I have leftovers?
Store in fridge. Use in salads or wraps. Reheat gently to maintain texture.
Best way to grill patties?
Preheat grill first. Pat each patty dry before grilling. Don’t press them too much.
